100g Emmental
500g veal fillets
Caper flowers
Basil, chives
2 shallots
4 candied tomato petals
Olive oil
1 lemon, salt, pepper

Preparation : 20 min
Preparation
Slice the veal fillets as thinly as possible with a big sharp knife. Place them on 4 plates and drizzle them with olive oil and lemon juice. Season to taste with salt and pepper. Cover with clingfilm and place in the fridge.

Coarsely chop the candied tomatoes and finely chop the shallots. Cut Le Palais des Saveurs Emmental into thin petals.
Before serving, sprinkle the carpaccio with the basil leaves,

the chives, the shallots, the candied tomatoes, the capers  and thin slices of Emmental.
Summer salad with emmental and aromas of citrus fruits

Ingredients :
200g Emmental and Mimolette
600g cooked prawns
2 green apples
500g cherry tomatoes
4 hearts of sucrine lettuces
4 hard-boiled eggs
1 handful of raisins
1 bag of pine nuts
A bunch of fresh coriander
Grapefruit juice, orange juice, balsamic vinegar, olive oil, salt, pepper.
