RECIPE : Festive cheese board of Fourme d’Ambert, Chutney of citrus fruits and grilled gingerbread

INGREDIENTS
Fourme d’Ambert butter
40 g of soft butter
100 g of Fourme d’Ambert Le Palais des Saveurs
10 g of dried apricots cut in dices
10 g of dried grapes cut in dices
20 g of roasted dried fruits (walnuts, nuts…) chopped boorishly
Mix up all the ingredients, pour it in a ramekin and let it cool in the fridge.
Chutney of citrus fruits
2 oranges
1 lemon
10 tablespoon of wine vinegar
70 g of brown sugar
Take fine zests of citrus fruits and blanch it. Blanch means put it in cold water and bring to the boil. It is necessary to realize this operation three times to eliminate the bitterness of citrus fruits. Meanwhile, take the supreme of citrus fruits, it is the pulp. Melt the sugar and the vinegar in a pan, add zests and supreme. Let reduce to obtain a texture jam.
Gingerbread
150 g of water
60 g of sugar
150 g of honey
3 g of 4 spices powder
Zests of one lemon
Zests of one orange
4 g of star anise
5 g of salt
150 g of flour
5 g of baking powder
95 g of butter
Preheat the oven at 390° F. Bring to the boil the water, the sugar, the salt and the honey. Then, add the spices powder, star anise and citrus zests. Add the butter and let it melt. Let infuse le mix during 20 minutes, off the heat. Sift the flour and baking powder. Filter the mix with spices and pour it on the flour. Mix up until the dough is homogeneous. Pour it in a cake mold, cook it in the oven 40 minutes.
Let cool the gingerbread on a railling. Cut your gingerbread in slices and grill it like a bread.
THE THING IN MORE : spices choice is primordial. It is honey and spices quality which will make the quality of the gingerbread. You will find in supermarkets some chutneys and gingerbread ready-to-use if you are lacking time. However I advise you to realize it by yourself.
